We are in full swing in the cellar, just about half way through harvest. We are still waiting on some late ripening merlot and cabernet so it looks like we'll have everything in by mid- October.

Harvest Season in the Napa Valley
Everything points to this being a really great year. The grape bunches themselves were very light so the total tonnage is down but the quality of the fruit is concentrated and intense. The aromas as you walk into the cellar each morning reward you for all of the hard work the day before.

Bronwen's Cheese Selection:
Here is our cheese selection to go with the Third Bottle White Table Wine,
"Pecorino Crotonese (Calabria, Italy) This is a semi-firm cheese made from sheep’s milk. It is aed in wicker baskedts and has a creamy, piquant flavor that works well with the acids in the 3rd Bottle white wine."

Pork Loin with Pears
We paired the Third Bottle White Table Wine with this delicious recipe:
1) Preheat oven to 350 degrees. 2) Dust a 2 lb. pork loin in ground cloves and smoked paprika. 3) Sear in a bit of olive oil to brown on all sides in an ovenproof pan. 4) Remove pork from pan and add two chopped shallots and 4 pears, halved, peeled and cored. 5) Lightly sauté shallots and pears to just starting to soften. 6) Add 1 cup GustavoThrace 3rd Bottle white wine to the pan, swirling to pick up the brown pieces. 7) Return the pork loin to the pan and place in oven.
8) Cook for about 20-25 minutes, until pork is still a bit pink in the middle.
9) Remove pork, shallots and pears to a platter.
10) Return pan to high heat on top of stove and reduce liquid for a couple of minutes.
11) Swirl in 2 T. butter to thicken and glaze sauce.
12) Cut pork loin, returning any juices to pan on stove.
13) Plate with slices of pork loin, some pear halves and a green vegetable, if desired.
14) Pour pan juices over meat and serve.
